
Winter Coconut Ramen Soup

Ingredients
- 2 tbsp olive oil
- 1 pack of ramen noodles (with seasoning packet)
- 4 cups vegetable broth
- 1-inch grated ginger
- 2 cloves minced garlic
- 341 mL canned corn
- 1/2 can coconut milk
- ½ brick raw, diced tofu
- Green onions for garnish

Cooking Instructions
- In a large pot, heat olive oil over medium heat
- Add garlic and ginger, cook until ginger and garlic begin to brown
- Add vegetable broth, coconut milk, seasoning packet, bring to a boil, reduce heat and let simmer for 15 minutes to mix flavours
- Turn up heat to medium-high, carefully add noodles and canned corn to broth, continue to boil until noodles are cooked (approximately 3-5 minutes)
- Portion your soup into a bowl, add raw diced tofu and green onions on top
- Enjoy!
