Winter Coconut Ramen Soup

 Ingredients
  • 2 tbsp olive oil
  • 1 pack of ramen noodles (with seasoning packet)
  • 4 cups vegetable broth
  • 1-inch grated ginger
  • 2 cloves minced garlic
  • 341 mL canned corn
  • 1/2 can coconut milk
  • ½ brick raw, diced tofu 
  • Green onions for garnish

Cooking Instructions

  1. In a large pot, heat olive oil over medium heat
  2. Add garlic and ginger, cook until ginger and garlic begin to brown
  3. Add vegetable broth, coconut milk, seasoning packet, bring to a boil, reduce heat and let simmer for 15 minutes to mix flavours
  4. Turn up heat to medium-high, carefully add noodles and canned corn to broth, continue to boil until noodles are cooked (approximately 3-5 minutes)
  5. Portion your soup into a bowl, add raw diced tofu and green onions on top
  6. Enjoy!
