Vegetable Rice Soup

  • 1 tbsp olive oil
  • 4 jars of water (or 2.5 cups)
  • ¼ cup powdered broth (chicken or veg)
  • ¾ cups rice
  • 1 chopped onion
  • 1 cup chopped carrots and celery (or vegetables of choice)
  • 1 lemon
  • Salt and pepper to taste
  • Optional: add protein of choice

Cooking Instructions

  • Heat oil over medium heat. Add onion, carrots and celery to a pot. Cook until vegetables are soft
  • Add powdered broth and water, stir
  • Bring to a boil
  • Add rice and reduce heat to medium-low
  • Simmer until rice is cooked
  • Add the juice of 1 lemon, salt and pepper
