Herb Bean Dip

Ingredients

  • 1 cup dried beans
  • Water
  • Lemon juice (to taste)
  • Chopped rosemary (or fresh herb of choice)
  • ½ cup chopped onion (any colour)
  • Salt & pepper (to taste)
  • Chips or crackers
  • Optional protein: Add chilli powder to taste for some extra spice!

Cooking Instructions

  1. Put beans into a bowl and cover with 3 inches of water
  2. Soak beans overnight at room temperature
  3. Drain and rinse beans 
  4. Put beans in a pot and cover with water
  5. Bring beans to a boil, then cover beans and simmer until beans are soft around 30 minutes
  6. Put beans into a bowl, use a fork or masher to mash beans
  7. Add lemon juice, fresh herbs, onion, salt, pepper and any other spices
  8. Stir ingredients together
  9. Enjoy with chips or crackers 🙂
