Vegetable Fried Rice

Ingredients

  • 1 cup long grained rice (refrigerated)
  • 1 teaspoon oil 
  • 1 egg
  • 1 yellow onion 
  • 1 cup chopped vegetables (of choice)
  • 2 cloves garlic
  • 2 tablespoons soy sauce (soy packets included) 
  • Salt and pepper (to taste)
  • Garnish with green onions and top with sriracha (optional)

Cooking Instructions

  1. Cook rice and refrigerate for at least 3 hours
  2. Heat oil in a large pan, add onion and fry until soft
  3. Add garlic and fry for a minute
  4. Add vegetables and fry until soft
  5. Turn heat to high, add rice to pan and mix often, cook until rice is brown
  6. Add soy sauce and egg to pan, constantly mixing until scrambled 
  7. Garnish meal with green onion and sriracha for some spice 
  8. Enjoy!
