Vegetable Fried Rice

Ingredients
- 1 cup long grained rice (refrigerated)
- 1 teaspoon oil
- 1 egg
- 1 yellow onion
- 1 cup chopped vegetables (of choice)
- 2 cloves garlic
- 2 tablespoons soy sauce (soy packets included)
- Salt and pepper (to taste)
- Garnish with green onions and top with sriracha (optional)

Cooking Instructions
- Cook rice and refrigerate for at least 3 hours
- Heat oil in a large pan, add onion and fry until soft
- Add garlic and fry for a minute
- Add vegetables and fry until soft
- Turn heat to high, add rice to pan and mix often, cook until rice is brown
- Add soy sauce and egg to pan, constantly mixing until scrambled
- Garnish meal with green onion and sriracha for some spice
- Enjoy!
